Shelly's Recipe

GRUYERE CHEESE AND OLIVE SPREAD

2 lb gruyere cheese, grated
2 cups sliced green onions
1 cup sliced stuffed green olives
1 cup olive oil
1/4 cup wine vinegar
1 tsp salt
1/4 tsp pepper
1 tbsp Dijon mustard

Combine first 3 ingredients. Prepare dressing with the remaining ingredients. Toss dressing with cheese mixture and let stand 30 minutes. Arrange a bowl lined with greens and garnish with finely chopped green onion tops. Serve at room temperature with crusty bread or crackers.
