1 onion and green or red bell pepper, chopped
1 cup butter
1 cup flour
1 lb crab meat
4 cups water
1 lb medium shrimp, peeled and deveined
1/2 lb bay scallops and flounder fillets
3 cup milk
1 cup shredded sharp cheddar cheese
1 tbsp white vinegar
1 tsp Worcestershire sauce
1/2 tsp salt
Pinch black pepper
Dash hot pepper sauce
1/2 cup grated parmesan cheese
Lightly grease a 13x9 inch baking pan. In a skillet, saute onion and pepper in 1/2 cup butter, cooking until tender. Stir in 1/2 cup flour; cook over medium heat for 10 minutes, stirring frequently. Add crabmeat; stir well. Press this mixture into bottom of baking dish and set aside.
In a Dutch oven, bring water to a boil. Add shrimp, scallops and flounder. Simmer for 3 minutes. Drain and reserve 1 cup cooking liquid; set seafood aside.
Preheat oven to 350. In a saucepan, melt remaining 1/2 cup butter. Stir in remaining 1/2 cup flour. Cook and stir constantly for 1 minute. Gradually add milk plus 1 cup reserved cooking liquid. Raise heat to medium and cook, stirring constantly, until mixture is thickened and bubbly. Stir in shredded sharp cheddar cheese, vinegar, Worcestershire sauce, salt, pepper and hot pepper sauce. Add cooked seafood and stir gently. Spoon seafood mixture over crabmeat crust and sprinkle with parmesan cheese. Bake for 30 minutes or until lightly browned. Serve immediately.
