SOUTHWESTERN TURKEY KABOBS

Marinade
1 tsp chicken bouillon granules
2 tbsp chili powder
1 tsp oil
2 tbsp lime juice
1 tsp crushed garlic
1/4 tsp sugar and ground red pepper

12 oz boneless, skinless turkey breast tenderloins, cut into 1 inch chunks
1 small red onion, cut into 3/4 inch chunks
1 1/4 cups sweet red pepper cut into 1 inch chunks

In a bowl, dissolve bouillon in 1/2 cup hot water. Stir in remaining marinade ingredients. Remove and reserve 1/4 cup marinade; set aside.

Stir in turkey and vegetables into marinade, stirring to coat. Cover and refrigerate for 1 hour. Drain and discard marinade.

Prepare grill. Alternately thread turkey and vegetables on 8 skewers. Place skewers on grill and cook about 6 minutes, turning and brushing with reserved marinade halfway through cooking time. Serves 4

NOTE: Can be prepared as above and broil about 4 inches form heat source.
