CHERRIES AND CREAM PARFAITS

1 cup light sour cream
1 tbsp sugar
21 oz can cherry pie filling
1 tsp lemon juice
fresh mint leaves (optional)

Beat sour cream and sugar in small bowl. Set aside.
Reserve 4 cherries from pie filling. Set aside.

Combine remaining cherry pie filling with lemon juice. Alternate layers of cherry pie filling with cream mixture in four parfait glasses, ending with pie filling. Dollop with cream mixture. Garnish with cherry and fresh mint.
