HOLIDAY MINT PIE

1 (8 oz) cream cheese, softened
1/3 cup sugar
1 (12 oz) carton frozen whipped topping, thawed, divided
3 drops green food coloring
1 cup Keeble Fudge Shoppe Grasshopper Cookies
1 (6 oz) chocolate pie crust
Fresh mint leaves or chocolate leaves, optional

In a large mixing bowl, mix cream cheese and sugar at medium speed until well blended. Fold in 3 cups whipped topping, food coloring and cookies. Spoon into crust. Refrigerate at least 3 hours or until set. Garnish with remaining whipped topping. Decorate with mint leaves if desired.
