CRISPY CHEESE-TOPPED FISH

2 lbs fresh or frozen, thawed White fish fillets, about 1 ½ inch thick (Cod or Sole)
1/2 tsp salt
1/8 tsp freshly ground pepper
6 Tbsp butter
1 medium onion, chopped
3 cups fresh breadcrumbs
1 cup grated cheddar cheese
¼ cup chopped fresh parsley
1 tsp dry mustard

Preheat oven to 350’F. Lightly grease 9x12 inch ovenproof glass baking dish. Season fillets with salt and pepper. Place fillets in baking dish. Melt butter in a large skillet over medium-low heat. Add the chopped onion and stir until tender, about 5 minutes. Add the remaining ingredients and mix well. Spread the topping over the fillets. Bake until the fish is opaque and flakes easily. The topping should be lightly golden brown 20 to 25 minutes. Serve immediately. Serves 6
