*STEAK TIPS WITH MUSHROOM SUACE*

2 1/2 lbs sirloin tips, uncut
1/4 tsp salt
1/2 tsp pepper
1/4 cup butter
1 shallot, finely chopped
5 Portobello mushroom caps, sliced
1/2 (750 ml) bottle burgundy wine
2 (14.5 oz) cans beef broth
2 tbsp flour
1 clove garlic, minced
Preheat grill for medium-high heat. Grill tips to desired doneness and season with salt and pepper. Remove to plate and set aside.
Melt butter in a skillet and saute shallots until transparent. Add mushrooms and cook, covered, about 5 minutes or until darkened. Remove mushrooms from pan and set aside. Deglaze pat with wine and 1 cup beef broth. Increase heat and bring to a boil. Allow to boil until reduced by one-third.
When the sauce has reduced, whisk flour in remaining beef broth and stir mixture and garlic into sauce. Return to a boil and continue to cook and stir for another 5-10 minutes or until sauce reaches desired thickness. Taste and adjust seasoning. Stir in mushrooms. Serve tips with sauce. Serves 6
NOTE: I like to serve with garlic mashed potatoes or buttered egg noodles.
