TEX-MEX BREAKFAST CASSEROLE

12 eggs
1/2 cup half and half
1 lb cook and crumbled bacon or sausage, optional
1 can of Ro-Tel tomatoes, drained
1 clove of garlic, minced
1/4 small onion, diced (about 2 tbsp)
1/2 cup cilantro, diced
1 Serrano chili, diced
1 cup of crushed blue-corn tortilla chips
2 cups shredded cheese
Salt and pepper to taste

Method:

Preheat oven to 350. Beat together the eggs with the half and half. Stir in the meat, tomatoes, onion, garlic cilantro and Serrano chili. Add salt and pepper.

In a greased 13x9 pan, layer the bottom with the crushed chips. Pour over the chips the egg mixture and then sprinkle the cheese on top. Cook uncovered for 35 minutes or until eggs are set. Let cool and then cut into squares and serve.
