3 tbsp olive oil
2 large cloves garlic, minced
2 (8 oz) loaves French bread, cut into 1/2-inch thick slices
3/4 lbs thinly sliced deli roast beef
1 (12 oz) jar roasted red peppers, rinsed, drained and chopped
2 cups shredded Italian cheese blend

Heat oven to 450. In 1-cup measure, combine oil and garlic; microwave on HIGH for 30 seconds. Lightly brush the top side of each bread slice with the oil mixture; arrange on 2 baking sheets. Bake for 6 to 8 minutes or until light golden brown.

Layer equal amounts of beef, red peppers and cheese over toasted bread. Return to oven; bake an additional 2 to 4 minutes or until cheese is melted. Serve immediately.
