ORANGE COCONUT CREAM JELLO SALAD

1 (3 oz) pkg orange flavored gelatin
1 cup boiling water
Grated rind of 1 orange
1 cup orange juice
2 tsp lemon juice
1 cup whipping cream
1/2 cup sugar
1/2 cup flaked coconut
Garnish: additional whipped cream and orange slices

Dissolve gelatin in boiling water. Stir in orange rind and juices. Chill until consistency of unbeaten egg white. Beat whipping cream until foamy; gradually add sugar, beating until stiff. Fold sweetened whipped cream and coconut into gelatin mixture. Spoon into stemmed glasses and chill until firm. Garnish with additional whipped cream and orange slices. Serves 6-8
