LEMON CASHEW BREAD

Pastry
1 1/2 cups flour
3/4 cup sugar
2 tbsp grated lemon rind
1 tsp baking powder
1/2 tsp salt
1/2 cup unsalted cashews, toasted and chopped
1/4 cup milk and lemon juice
6 tbsp vegetable oil
2 eggs

Glaze
1/2 cup sugar
2 tbsp lemon juice

Preheat oven to 350. Grease a loaf pan. In a medium bowl, combine ingredients in order given. Pour into loaf pan and bake for 1 hour. Cool 15 minutes. Remove from pan. Poke holes in top of loaf with a toothpick. Mix together glaze ingredient and brush over top and sides of loaf. Let stand until glaze hardens before slicing.
