CRAB IN WINE SAUCE

1 lb backfin crab meat
1/2 cup Riesling wine
1/8 tsp nutmeg and cayenne pepper
1/2 tsp salt
2 egg yolks, beaten
1/2 cup half-and-half

Add spices to wine. Add crab meat and simmer slowly for 10 minutes, stirring frequently. Add half-and-half and stir 5 minutes longer before removing from heat. Mix in beaten yolks, diluted with a little sauce. Heat through. Serve with wild rice or angel hair pasta.
