HOLE IN THE WALL SALSA

24 oz tomato juice
1/4 cup diced celery, onion, cilantro and red bell pepper
2 cups tomatoes, diced
1 jalapeno, diced
1 tbsp salad oil and garlic
2 tbsp oregano
Salt and pepper, to taste

Saute vegetables in 1 tbsp salad oil until soft. Add rest of ingredients and simmer 20 minutes. Thicken with equal parts of cornstarch and water, starting with 1 tbsp of mixture and add until desired consistency is reached.
