1 chicken, cut into serving pieces
Salt, pepper, and cayenne to taste
1/2 cup oil
1 lb fresh pork sausage
3 large onions chopped
1 large bell pepper chopped
4 stalks celery chopped
2 tsp garlic powder
2 cup water
1/2 cup chopped green tops
1/2 cup chopped parsley

Season chicken with salt, pepper, and cayenne. Brown chicken in hot oil in heavy skillet and remove when browned. Brown sausage, remove and cut into 1 1/2 in. pieces. Remove most of the oil from skillet and add veg. saute till transparent. Add sausage, chicken and garlic powder to skillet with onions; slowly add water, cover and simmer 30 to 40 min. Add green onion and parsley just before serving. Serve over rice. Serves 4
