CRAB MEAT AU GRATIN

1/3 cup chopped green onion
1/2 cup finely chopped celery
1/4 cup chopped green pepper
1/2 cup butter
6 tbsp flour
1 (5-1/3oz) can evaporated. milk
2 egg yolks, well beaten
1/4 cup grated Amer. cheese
1/4 tsp salt
1/4 tsp pepper
Dash red pepper
2-1/2 to 3 cup white lump crab meat
1/4 cup minced parsley
Grated cheese
Paprika

Saute vegetables in butter, using heavy skillet; slowly stir in flour; then slowly stir in milk and egg yolk. Add 1/4c cheese; let melt over low heat, stirring often. Add seasonings; carefully stir in crab, add parsley. Put mixture into 6 buttered individual clam shells or into a buttered casserole dish. Sprinkle with grated cheese and paprika. Bake uncovered at 350 till hot and bubbly and top is lightly browned.
