LEMON CHICKEN KABOBS

Category: Kabobs/Kebobs/Skewers

4 boneless, skinless chicken breasts, cut into pieces for kabobs

Marinade
1/4 cup butter
2 tbsp minced onion
2 tbsp lemon juice
1 tbsp Worcestershire sauce
1/2 tsp thyme
1 tbsp chopped parsley
1/2 tsp pepper

Place chicken pieces on skewers and place in a glass dish. In a skillet, melt butter and add onion until soft. Add remaining marinade ingredients, stir to combine and remove from heat to allow to cool. Pour marinade over kabobs and marinate for 30 minutes, turning 1 to 2 times.

Preheat broiler and place kabobs on a well-oiled broiler pan. Broil 2-4 inches from heat, turning once, until chicken is tender, about 5-8 minutes. Serves 4
