VIRGINIA CRAB PATTIES

1 lb picked crabmeat
1 1/2 cups fresh white breadcrumbs
1 egg yolk
2 tbsp mayonnaise
12 green onions, finely chopped
1 hard-boiled egg, finely chopped
1/2 tsp chopped fresh marjoram
2 tsp lemon juice
1/4 tsp salt and pepper
1/8 tsp cayenne pepper
1/2 cup oil
1/2 bunch watercress, trimmed and washed, for garnish

In a medium bowl, combine ingredients except oil. Mix and knead until it comes away from the sides of the bowl. Shape mixture into 2 inch balls. Place on a board ad flatten with palm of had.

In a large skillet, heat the oil over moderately high heat. When hot, add patties, a few at a time, and fry for 3-5 minutes or each side or until they are deep golden brown all over. Transfer with a slotted spoon on paper towels to drain. Keep warm while prepare remaining patties. Serve immediately.
