DANISH SHRIMP APPETIZER

1 lb uncooked medium shrimp, cleaned, peeled, deveined and butterflied
1 (8 oz) pkg cream cheese, room temperature
4 oz bleu cheese, crumbled
1 bunch fresh parsley, chopped fine

Steam shrimp until pink. Chill.

Meanwhile, combine cheese until smooth. When shrimp is chilled, spread about a rounded tbsp of mixture along back of each shrimp. Roll in parsley until cheese is covered. Chill stuffed shrimp again until cheese is firm.
