*APPLE STRUDEL*

3/4 cup finely crushed apple-cinnamon or regular graham crackers
1/2 cup packed brown sugar
1/2 cup finely chopped raisins and walnuts
1 sp grated fresh lemon peel and ground cinnamon
1 1/2 lbs Granny Smith apples, peeled and diced, about 4-5 medium)
9 sheets phyllo dough, thawed
1 1/2 sticks butter, melted
Sugar
Confectioners sugar, for dusting

Preheat oven to 375. Lightly grease a large jelly-roll pan. In a large bowl, mix 2 tbsp graham cracker crumbs, and next 5 ingredients. Add diced apples and toss to coat. Lay a kitchen towel on a work surface with one short side nearest you. Place 1 sheet phyllo on towel (keep remaining dough covered with a damp towel to prevent drying.) Lightly brush entire surface with butter and sprinkle with a scant tbsp graham cracker crumbs. Repeat procedure 2 more sheets in the same manner.

Mound 1 1/3 cups apple mixture lengthwise on phyllo 1 1/2 inches in from sides and end nearest you. Fold sides of each phyllo over filing. Gently roll up the strudels tightly to enclose filling. Lifting carefully on towel and place on of prepared pans, seam-side down. Brush with melted butter on top and sides. Sprinkle with sugar. Place the strudels widely on pan and bake for 40-45 minutes until golden brown.

Transfer strudels to wire rack to cool and dust with confectioners sugar. Cut each strudel cross-wise into 6 slices.

Store, wrapped separated at room temperature
