PECAN PARMESAN CRUSTED CHICKEN

6 boneless, skinless chicken breasts
1 1/2 cups soft bread crumbs
1/3 cup grated parmesan cheese and ground pecans
1 tsp dried oregano
1/2 tsp seasoned salt and dried basil
1/4 tsp pepper
2 tsp cornstarch
2 egg whites
1 tbsp olive oil

Flatten chicken to 1/2 inch thickness. In a shallow bowl, combine breadcrumbs with next 6 ingredients.

In another bowl, beat cornstarch and egg whites. Dip chicken into egg white mixture and then coat with crumb mixture.

Brown chicken in oil over medium heat in a large skillet. Transfer to an ungreased casserole dish and bake at 450 for 8-10 minutes or until juices run clear.
