Bacon and Whiskey BBQ Sauce

½ lb bacon
½ cup onion, finely chopped
2 tablespoons minced garlic
1 - 6 oz can tomato paste
⅓ cup of whiskey
4 tablespoons Worcestershire sauce
2 cups ketchup
⅓ cup apple cider vinegar
3 tablespoons brown sugar
½ cup very strong coffee
½ cup cup honey
½ cup pure maple syrup (not the fake stuff)
2 tablespoons Intentional Hospitality Coffee Dry Rub

(1) Cut bacon in to ½ inch pieces and cook in large dutch oven until bacon is brown and crispy

(2) Add the onion, garlic, tomato paste, and Coffee Dry Rub. Continue cooking, stirring occasionally for 5 minutes or until the onion is softened.

(3) Add remaining ingredients, bring to a low simmer.

(4) Cover and cook stirring occasionally for 30 minutes.

(5) Transfer to a glass jar with lid and store in fridge
