PORK CHOPS WITH MUSHROOM SAUCE

3/4 cup Italian bread crumbs
1/2 cup flour and grated parmesan cheese
8 boneless pork chops, cut 1/2 inch thick
1/4 cup olive oil
1 1/2 tbsp butter
1 1/2 cups apple juice
2 (8 oz) pkg sliced fresh mushrooms
1/4 cup chopped fresh parsley
Additional grated parmesan cheese
Stir together first 3 ingredients; add salt and pepper, to taste. Dredge pork chops in mixture. In a large skillet, brown in hot oil. Cook in batches 3-5 minutes on each side or until done; reserving drippings in skillet. Remove from skillet; keep warm.
Add apple juice and butter to skillet, stirring to loosen browned particles. Add mushrooms; bring to a boil; reduce heat and simmer 15 minutes or until tender. Serve over pork chops; sprinkle with parsley. Top with additional cheese. Serves 8
