DIJON GLAZED CORNED BEEF

2 1/2 lb. corned beef brisket
Water
2 tsp Dijon mustard
2 tbsp honey
1 tbsp orange juice concentrate
In a Dutch oven, cover brisket with water. Cover tightly and simmer 2 1/2 - 3 1/2 hours or until tender. Combine remaining ingredients and set aside. Remove brisket from cook liquid, trim fat from outer surface. Position oven rack to the brisket on broiler pan rack is 3-4 inch from heat source. Brush glaze over brisket and broil 2-3 minutes or until glaze begins to caramelize. Carve brisket diagonally across the grain into thin slices.
