STRAUSSBERG POTATOES

6-8 medium potates, parboil about 20 minutes with skin on
1 cup butter
1 medium onion, chopped
1 tsp slat
1/4 tsp pepper
2 tbsp flour
2 cups sour cream
1/2 cup bread crumbs
2 cups shredded sharp cheddar cheese

Remove skins from cooled potatoes. Melt 1/2 cup butter, add onion and cook until golden brown. Dice potatoes and put in a large mixing bowl. Sprinkle with flour, salt and pepper. Add onion in butter, sour cream and toss lightly. Pour into a 13x9 inch baking pan. Melt remaining 1/2 cup butter and mix with bread crumbs. Sprinkle with cheese and bake at 350 for 40 minutes.
