CHOCOLATE COVERED POPCORN

12 cup popped popcorn
1-2 cup unsalted peanut or pecans optional
1/4 cup butter
2 cups milk chocolate chips
1 cup corn syrup
1 tsp vanilla extract

Spray a large roasting pan with cooking spray. Pop the popcorn and place in the pan, along with the peanuts.

Combine butter, chocolate chips and corn syrup in a saucepan and cook over medium heat, stirring constantly until it boils. Remove from heat and stir in vanilla extract. Pour mixture over popcorn and stir through to coat. Bake at 300 for 45 minutes stirring frequently. Cool completely. Break into pieces and store in airtight container.
