1/2 brown onion, chopped
3 tomatoes, cut into small pieces
1 small squash. remove seeds and cut each into eight pieces
3 1/2 oz mushrooms, halved
1 tbsp olive oil
3 to 6 skinless chicken pieces on the bone, drumsticks or thighs
2 sprigs lemon thyme
1/2 cup dry white wine
6 pitted black olives, optional
Salt and freshly ground black pepper
1 x clove garlic, finely chopped
1 tbsp finely sliced basil
Heat oil in a non stick saucepan and, on medium heat, brown chicken pieces for 1 minute on each side. Transfer chicken to a plate. Add onion and thyme to pan and, on medium heat, stir fry for 2 minutes. Add tomato and stir well before adding wine, mushrooms, olives and chicken pieces. Season with a little salt and pepper and bring to a simmer. Cover and cook for about 20 minutes. Just before serving, stir in garlic and basil. Serves 10
