1 1/4 tsp salt

1 (4 to 5 lb) bone-in pork loin
Vegetable cooking spray
1 large sweet onion, coarsely chopped
1 can (28 oz) crushed tomatoes
1/2 cup ketchup
1/4 cup balsamic vinegar
2 tbsp brown sugar
2 (9 oz) cans cannelloni beans, rinsed and drained
Rub salt and pepper over roast; let stand 15 minutes. Brown in spray pan on all sides. Remove roast from pan; add onions and saute. Return roast to Dutch oven. Combine tomatoes, ketchup, vinegar and brown sugar. Pour over roast. Bake, covered, at 350. 45 more minutes. Stir in beans; bake 15 minutes more, uncovered. Let sit 5 to 10 minutes before slicing. Serves 6-8
