3 large onions, finely chopped
1 large green pepper, finely chopped
2 cloves garlic, minced
3 tbsp olive oil
3 (15 oz) cans tomato sauce
1 (12 oz) can tomato paste
1 tbsp sugar
1 tsp Italian seasoning
1 tsp worcestershire sauce
1/2 tsp celery seeds
1/4 tsp dried basil
1/8 tsp red pepper
3 bay leaves
2 tsp salt
2 lbs Italian Sausage
2 3/4 cups water
1 lb mushrooms, sliced

Saute chopped vegetables and garlic in olive oil until tender. Add sauce, paste, sugar and seasonings. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.

Remove casings from sausage and brown in a large skillet and crumble. Drain off drippings. Stir sausage into sauce mixture. Add water; cover and simmer for 45 minutes. Stir in mushrooms, cover and simmer for 15 minutes.

Serves 12
