CHOCOLATE AMARETTO CHEESECAKE III

Crust
15 graham crackers, crushed
2 tbsp sugar
1 oz unsweetened chocolate
2 1/2 oz butter
Filling
6 oz semi-sweet chocolate
4 oz almond paste (marzipan)
1/3 cup amaretto liqueur
3 (8 oz) pkg cream cheese, softened
1/2 cup sugar
4 eggs
1/2 cup whipping cream
Preheat oven to 350. Crust Combine graham cracker crumbs and sugar. Melt chocolate and butter; add to crumbs; mix well. Pat mixture on bottom and sides of a 10 inch springform pan.
Filling: Melt chocolate and set aside. Cut almond paste into small pieces and thoroughly mix in amaretto in food processor. Set aside.
In a large bowl, beat cream cheese until smooth. Add sugar, almond paste and chocolate, beating between each addition. eggs, one at a time, mixing well after each addition. Beat until light. Pour over crust in pan. Bake for 50 minutes. Cake may not seem done in the middle and will jiggle a lot but firms up when refrigerated. Refrigerate at last 5 hour before serving.
