2 1/2 cups milk
1/2 tsp each powdered mustard AND garlic salt
1 tbsp butter
1/2 cup chopped onion
3 tbsp EACH melted butter and flour
¾ lb cheddar cheese, cubed
3 (10 oz) pkg frozen chopped spinach, thawed and drained
1 cup shredded Monterey jack cheese

Preheat oven to 350. In medium saucepan, combine milk, mustard and garlic salt. Bring to a slow boil and simmer for 2 minutes.

In a small saucepan, heat 1 tbsp butter over medium heat. Saute onion in butter until browned; stir into milk mixture.

In a small saucepan, combine 3 tbsp melted butter and flour. Cook over medium-high heat until thickened; stir into milk mixture. Add cheddar cheese to the milk mixture, mixing well to melt. Stir in spinach. Pour mixture into a casserole dish and sprinkle with Monterey jack cheese. Bake for 10 minutes or until heated through. Serves 8.
