SWEET & SPICY WINGS
Category: Wings
Sauce:
1/3 cup brown sugar
1/3 cup Worcestershire sauce
1/4 cup ketchup
1 tbsp honey
2 tsp hot sauce (like Tabasco)
2 tsp apple cider vinegar
Wings:
Oil for frying
3 lbs chicken wings, tips removed, cut at the joints
For the Sauce:
Mix all ingredients in a pot over medium heat. Cook, stirring frequently, until sugar has dissolved and sauce thickens up a bit.
For the Wings: Heat oil in a deep-fryer. Drop the wings into the deep-fryer in batches. The amount you drop at a time will depend on the size of the fryer. Do not drop too many as the temperature of the oil will drop too much. Fry until golden brown. I think mine took about 12 minutes.
Put the wings and the sauce in a large bowl with a lid. Shake until wings are coated in the sauce. Serve with blue cheese dressing and celery stalks.
Blue Cheese Dressing
3/4 cup sour cream
1 1/3 cups mayonnaise
1 tsp Worcestershire sauce
1/2 tsp dry mustard
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp ground black pepper
4 oz blue cheese, crumbled
In a large bowl, whisk together the sour cream, mayonnaise and Worcestershire sauce. Season with mustard, garlic powder, salt and pepper. Stir in blue cheese.
