ORZO WITH PARMESAN AND BASIL

Category: Rice/Risotto

3 tbsp butter
1 1/2 cups orzo
3 cups of chicken broth
1/2 cup grated parmesan cheese
1 1/2 tsp dried basil
Salt & pepper to taste
2 tbsp plain yogurt (thinned with a little milk), optional

Melt butter in skillet over med-high heat. Add orzo and saute 2 minutes until slightly brown. Add broth and bring to a boil. Reduce heat, cover & simmer until orzo is tender & liquid is absorbed, about 20 minutes. Mix in parmesan and basil. Season with salt & pepper.

For a creamier pasta, stir in 2 tbsp. plain yogurt thinned with a little milk.
