GREEK FRIED POTATOES

6 medium red potatoes, diced
2 tbsp olive oil
1/2 red onion, chopped
1 bunch green onions, chopped
4 garlic cloves, minced
1 tsp dry basil and oregano
1/2 tsp dry rosemary
1 bunch fresh spinach, rinsed and stems removed
1 tbsp EACH vinegar and dry sherry or 2 tbsp red wine vinegar
Salt and pepper, to taste

Boil potatoes until tender. Drain and set aside. Heat oil in large skillet. Sauté of onion, garlic and spices until onion is just tender. Add the potatoes and sauté until lightly browned. Cover with spinach and sprinkle with vinegar and sherry. Cover and cook on low until spinach is tender. Remove from heat and stir the mixture together. Season with salt and pepper. Serves 6
