6 medium baking potatoes, unpeeled and cubed (about 2 lbs)
1/4 cup butter
1 pkg dry onion soup mix
1 1/2 cups shredded cheddar cheese
5 green onions, chopped
Preheat oven to 400. Place potatoes in a lightly 13x9 inch baking dish. Dot with butter, and sprinkle with soup mix. Cover and bake for 25 minutes; uncovered and stir. Cover and bake 30 more minutes. Sprinkle with cheese and green onions; serve immediately. Serves 6
