ITALIAN SAUSAGE STUFFED MUSHROOMS III

1 lb mushrooms stems removed and chopped
2 tbsp oil, divided
1 (3.5 oz) hot Italian sausage, casing removed
1/4 cup finely chopped onion and sweet red or green bell pepper
1 tbsp dried Italian bread crumbs
Heat oven to 400. In a bowl, toss mushroom caps with 1 tbsp oil and arrange caps cavity side down; bake until tender, about 10 minutes.
In a small skillet, heat remaining oil. Add sausage, chopped vegetables and mushroom stems; cook and stir, breaking sausage into smaller pieces with a fork, until cooked through, about 5 minutes. Add liquid collected in the baking pan to the sausage mixture; cook until the liquid has evaporated. Remove from heat; stir in breadcrumbs. Turn mushroom caps over and stuff with sausage mixture. Bake until stuffing is browned, about 10 minutes. Serve hot.
