ITALIAN SAUSAGE STUFFED MUSHROOMS IV

16 large mushrooms, stems removed and chopped
6 oz sweet Italian sausage, casing removed
1/2 green pepper, diced
1 medium onion, diced
1 clove garlic, minced
3 tbsp olive oil
2 oz pepperoni, diced
2 tbsp minced parsley
1/4 cup grated parmesan cheese
Italian bread crumbs
2 tbsp butter
Juice form 1/2 lemon

Brown meat, green pepper, onion and garlic in a skillet with 1 tbsp oil. Add 1 tbsp oil, parsley and cheese. When blended, add butter and juice from 1/2 lemon. Add bread crumbs until crumbly. Fill mushrooms with mixture, round up tops. Put in a shallow baking dish; add remaining oil and 1/4 cup water in baking dish. Bake at 350 for 20 minutes.
