ITALIAN STUFFED MUSHROOMS II

1 lb mushrooms, stems removed
2 tbsp butter
2 cloves garlic, finely chopped
1/4 cup chopped green onions and red bell pepper
1 1/2 cups soft bread crumbs
2 tsp Italian seasoning
1/4 tsp salt and pepper
1 tbsp butter
Grated parmesan cheese
Preheat oven to 350. Finely chopped stem of mushrooms. Melt 2 tbsp butter in a skillet over medium heat. Cook chopped stems, garlic, onions and pepper in butter about 3 minutes, stirring frequently, until onions are softened; remove from heat. Stir in bread crumbs, Italian seasoning, salt and pepper.
Fill mushroom caps with bread crumb mixture. Melt 1 tbsp butter in baking pan in oven. Place mushrooms, filled side up, in pan. Sprinkle with cheese. Bake 15 minutes. Set oven control to broil. Broil mushrooms 3-4 inch from heat for about 2 minutes or until tops are golden brown. Serve hot. Variation: Can be cooked on the grill – Brush an 8 inch foil pan with vegetable oil. After placing stuffed mushroom in pan, cover pan with foil and seal edges securely. Grill mushrooms 4-6 inch from medium for 15-20 minutes or until tender.
