ITALIAN PESTO STUFFED MUSHROOMS

6-8 large mushrooms, cleaned and stems removed and minced
2 cups ricotta cheese
3/4 cup shredded mozzarella cheese and parmesan cheese, divided
3-4 tbsp pesto
Olive oil

Preheat oven to 375. Brush inside and out with olive oil. Mix minced mushroom stems with other ingredients together, reserving 1/4 cup parmesan cheese. Stuff caps and sprinkle with reserved parmesan cheese. Place caps in a small baking pan and bake for 20-25 minutes or until brown and crusty on top.
