CARROTS IN ORANGE-GINGER SAUCE

12 medium carrots, peeled and cut into thin strips, about 2 1/2 to 3 inches long
Juice for 4 oranges
2 tsp grated orange rind and grated fresh ginger
2 tsp flour
1/2 tsp flour
1/2 tsp salt
4 tbsp butter

Boil carrots until barely tender and remove from heat and do not drain so the will continue to cook.

In another pan whisk together remaining ingredients, except butter, over medium heat until thickened. Add butter and cook until melted. Drain carrots, pour sauce over and stir to coat. (They can be kept in a warm oven until ready to serve.) Serves 6-8
