WHISKEY STEAKS

Category: Steaks - Beef

2 tbsp cooking oil and butter
6 1/2 lb beef tenderloins
Salt and pepper
1 tbsp butter
2 tbsp minced shallots
1/2 cup beef broth
1/3 cup bourbon
3 tbsp butter, softened

Heat oil and butter in a skillet. Saute steaks for 5-5 minutes on each side. Remove to a warm platter and season with salt and pepper. Pour oil out of skillet and add 1 tbsp butter and shallots, cook 1 minute. Add broth and boil rapidly for 2 minutes, scraping pan. Add bourbon; boil 1-2 minutes more. Remove from heat; stir in butter, 1 tbsp at a time. Pour sauce over steaks and serve. Serves 6
