SWEET POTATO CASSEROLE WITH WALNUTS

4 cups sweet potatoes, cooked and mashed
1 (8 oz) pkg cream cheese, softened
1/2 cup unsalted butter, softened
2 eggs, beaten
1/4 cup packed brown sugar
2 1/2 tbsp dry sherry
1/4 tsp salt
3/4 cup black walnuts, chopped
1/2 tsp nutmeg

Preheat oven to 350. Whip together ingredients except nuts and nutmeg, until light. Stir in nuts and place into a buttered casserole dish. Spread evenly and lightly sprinkle with nutmeg. Bake 45 minutes or until golden. Serves 8
