CARIBBEAN CHICKEN AND RICE

1 lb boneless chicken, diced into small chunks
1/4 medium onion and green, yellow and red pepper, finely chopped
1 oz cilantro
2 tsp chicken base
2 whole garlic clove garlic, minced
1 tsp salt
2 1/2 cup chicken stock
2 cup long grain rice
1 oz Spanish chorizos, finely chopped
1 1/2 oz olive oil

Put ingredients in 3-quart saucepan with olive oil at medium heat; cook them for 3-4 minutes. Add chicken and chicken. Simmer about 25 minutes or until rice is tender.
