COUNTRY CHICKEN CASSEROLE

1/2 lb mushrooms, quartered
2 onions, chopped
3 tbsp butter, divided
2 cups cubed cooked chicken
2 cups diced cooked peeled potatoes
1 (2 oz) jar pimientos, drained
1/4 cup chopped parsley
1 cup cream
1 tsp instant chicken bouillon granules
1 tsp salt
1/2 tsp dried rosemary, crushed
1/4 tsp Cavenders Greek seasoning
1/8 tsp pepper

Topping
2 tbsp butter, melted
1 cup soft bread crumbs

Saute mushrooms and onions in 3 tbsp butter until tender. Add remaining ingredients and simmer until heated through and spoon into a greased 2 quart casserole.

Combine topping and sprinkle over casserole. Bake, uncovered, at 350 for 20-25 minutes or until crumbs are toasted.
