BEEF ROAST WITH MUSHROOM STUFFING

Roast
1/2 tsp salt
2 lb flank steak
1/4 tsp white pepper
1 tsp Dijon-style mustard
Mushroom Stuffing
2 tbsp oil
4 oz chopped mushroom pieces
2 tbsp chives, chopped
1/2 cup dried bread crumbs
1 tbsp tomato paste
1/4 tsp salt
1 tsp paprika
Gravy
3 bacon strips, cubed
1 cup beef broth
2 tbsp ketchup
2 small onions, chopped fine
1 tsp Dijon-style mustard
Lightly salt and pepper steak.  Spread 1 side with mustard.  Prepare stuffing by heating oil I pan, add onion and cook for 3 minutes or until lightly browned.  Add mushrooms; cook for 5 minutes.  Stir in parsley and next 6 ingredients.  
Spread stuffing on mustard side of steak, roll up jelly roll fashion and brown on all sides, approximately 10 minutes.  Add onions; saute for 5 minutes.  Pour in brown, cover Dutch oven, simmer for 1 hour.  Remove meat on a preheated platter.  Season pan juices with mustard.  Salt and pepper to taste; stir in ketchup.  Serve gravy separately.  Serves 6
