CHEESY GREEN CHILI POTATO SKINS

6 potatoes
6 hard boiled eggs, chopped
1 (4 oz) can diced green chilies
1 cup grated cheddar cheese
1/2 tsp hot pepper sauce
1/8 tsp salt
1 cup medium taco sauce

Preheat oven to 350. Bake potatoes in oven until tender, about 1 hour. Remove from oven and allow to cool, about 30 minutes. Cut in half and remove the pulp without breaking the skins and cut in half again.

In a large bowl, combine 1/2 of potato pulp, and next 5 ingredients. Spoon into each potato skin.

Preheat oven to 425. Place stuffed potatoes on a lightly oiled baking sheet and bake for 15-20 minutes or until cheese is melted. Remove from oven and top with taco sauce. Serves 6

NOTE: For a heavier consistency, add more potato pulp and refrigerate remaining pulp for other uses.
