SQUASH CASSEROLE II

3 cups squash cooked
1 medium onion, chopped
1 stalk celery, chopped
1 carrot, grated
1/2 cup butter
1 can cream of chicken soup
1 (2 oz) jar pimentos
1 (8 oz) container sour cream
Salt and pepper to taste
1/2 cup grated cheddar cheese
1/2 bag stuffing mix

Cook squash and onion together until tender. Drain. Mix with remaining ingredients except cheese and some of the stuffing mix. Put in a casserole dish and top with remaining stuffing and reserved cheese. Bake at 350 for 35-40 minutes.
