YAM AND APPLE CASSEROLE

2 medium granny smith apples, peeled, cored and sliced
1/4 - 1/2 cup unsweetened apple juice
2 (16 oz) cans yams, drained
4 tbsp butter, melted
1/4 cup brown sugar and dark corn syrup
1 tsp cornstarch
2 tbsp sherry
1 tsp cinnamon
1/2 tsp nutmeg

Mash yams. Mix remaining ingredients, except apples and combine with yams. Blend until creamy. Spread half of yam mixture into greased 10” round baking pan. Arrange 1/2 of apples over yams.

Repeat and brush top layers of apples with 2 tbsp melted butter, sealing apples. You can freeze or refrigerate for up to 4 days. Bake, uncovered, at 350 for 30 minutes.
