VENEZUELAN SWEET POTATOES

2 oranges
3 large sweet potatoes, peeled and sliced
6 tbsp butter
1 cup brown sugar
1/2 tsp salt
1/8 tbsp ground cinnamon
1 cup pineapple or apple juice
1 1/2 tbsp soy sauce
Butter, for greasing pan

Grate rind of one orange; set aside. Peel both oranges and cut into slices. Arrange potatoes and oranges in layers in a butter 1 1/2 quart baking, dotting each layer with butter and sprinkling with mixture of sugar, salt, cinnamon and orange rind. Pour the juice and soy sauce over the layered potato mixture. Cover and bake 1 hour at 375 or until a thick syrup forms.
