TWICE BAKED SWEET POTATOES II

6 sweet potatoes, scrubbed
Vegetable oil
1/4 cup butter and maple syrup or honey
1/2 cup whipping cream or half-and-half
1/4 tsp cinnamon
1/8 tsp nutmeg
Dash allspice
1/4 cup chopped nuts

Preheat oven to 400. Remove potatoes from oven and set aside until cool enough to handle. Horizontally cut off top 1/3rd of potato. Scoop out potato, leaving a 1/4 inch shell. Combine potato flesh with remaining ingredients, except nuts and puree. Fill shell with puree. Return to cookie sheet. Top with chopped nuts and bake 20 minutes or until hot.
