TWICE BAKED SWEET POTATOES I

4 sweet potatoes, scrubbed
1/4 cup orange marmalade
1/2 cup milk
2 tbsp plus 2 tsp unsalted butter, melted

Preheat oven to 400. Remove potatoes from oven and set aside until cool enough to handle. Horizontally cut off top 1/3rd of potato. Scoop out potato, leaving a 1/4 inch shell. Combine potato flesh with remaining ingredients and puree. Fill shell with puree. Return to cookie sheet and bake 20 minutes or until hot.
